Ingredients:

  • 1.5 cups millet flour
  • 1 cup sugar
  • 4 cups tamarind stock (1 pound tamarind pods, 8 cups water)
  • 2 pieces of peeled ginger (approx. 5 cm)
  • 1 pineapple, peeled and cut into cubes
  • 1 pinch of chilli powder

How it works:

  • remove the outer skin of the tamarind and the membrane inside
  • bring the tamarind pulp to the boil in a deep pan
  • boil for about 30 minutes, mashing the tamarind with a wooden spoon
  • allow the liquid to cool and drain through a kitchen towel
  • Puree the pineapple and ginger until smooth
  • Add the millet flour to the pineapple mixture and blend for a few minutes
  • Add the tamarind stock, sugar and chilli powder and mix well again
  • Pour through a fine sieve and serve with ice
